They can go directly from freezer to oven, into the microwave, under the broiler, and through the dishwasher without harming their glossy, lead-free glaze, which does not absorb odors or moisture and is so hard it will not crack, discolor, or scratch--even if food is cut on it. They measure 3-1/2 inches in diameter and 1-7/8 inches high. Since 1850, Emile Henry cookware and bakeware have been made in Burgundy, where a unique clay is kiln-fired into a ceramic unsurpassed for conducting and retaining heat. These are simply the best containers for making creme brulee. They are a perfect single serving size. They hold up to the heat and never discolor or change the taste of the food.In fact I have even been served these exact Ramekins in a restaurant, that should speak to their quality. We also use them to serve sauces when we serve buffet style or for holding measured ingredients when cooking.A very simple, elegant and relativly inexpensive kitchen accessory.

Great ramekins with high heat tolerance. Easy to clean and they stack nicely. Perfect size for most recipes (6oz. - 1 3/4" high, 3 1/2" diameter). Hint: When using the ramekins in a 'bain-marie', a jar lifter such as the (Norpro 600 Jar Lifter) is a useful tool to have. You can lift the ramekins safely out of the water bath - No need to buy a pan with a "ramekin lifter/holder" rack.

These ramekins are absolutely perfect for creme brulee, which is one of my favorite deserts of all time. They're the perfect size, deal with the heat well, and don't discolor at all.
